Canning is a method of food preservation in which food is processed and sealed in an airtight container. The process was invented by Nicolas Appert of France in 1809. Canned food can last one to two years, unopen and up to six months in the refrigerator once opened. Canning allows you to lock in the ripeness of fruits and vegetables. You can eat different, ripe produce in and outside of its’ growing season and enjoy new produce combinations.
